GITA’S AVOCADO, MANGO & PINE NUT SALAD

This is a salad that has been adapted from the Australian Womens Weekly Barbeque Cookbook. A great range of cookbooks! Please be aware that an Australian tablespoon is 20mls (US & UK is 15mls), an Australian teaspoon is the same as the US & UK (5mls), and 1 cup is 250mls.
Ingredients
2 avocados, peeled and sliced
2 mangoes, peeled and sliced
½ cup pine nuts, toasted
200 gms diced bacon, fried until just crispy,
I packet Gourmet lettuce mix
Dressing
¼ cup olive oil (normal, not Extra-Virgin)
2 tablespoons lemon juice
1 teaspoon French mustard
1 tablespoon thickened cream
Method
1. Cook bacon in pan until crisp.
2. Drain bacon.
3. Arrange lettuce over a large platter.
4. Then arrange avocado, mango, pinenuts and bacon over lettuce.
5. Top with Dressing.
6. Dressing: Combine all ingredients in a screw-top jar and shake well. Refrigerate till ready to serve salad.
